Matt,

In answer to your question, "How do you set the Don't Fragment Bit with
the standard ping utility in Linux?"

I did a search on the Internet and found nothing. Next I did a standard
ping while running ethereal. It turns out that the Don't Fragment bit is
turned on by default.

Its a good question. I am going to post your question out on the LEAP
mailing list. I would like to find out if anyone knows of a way to
manipulate the fragment bit with the standard ping utility too.

There is always hping though. http://www.hping.org/index.html

hping supports 
  -x  --morefrag   set more fragments flag
  -y  --dontfrag   set dont fragment flag
  -g  --fragoff    set the fragment offset
